A fresh, and flavorful Taco Night menu to bring some Mexican Cantina to your weeknight dinner. [nbsp]Leslee will be preparing Baked Plantains, a quick and healthier version of their traditional fried version. [nbsp]The Jalapeno Cheddar Corn Fritters are a flavor-packed appetizer, easy to make ahead, and would be a great addition to an hors d’oeuvres party, dunked in a spicy chipotle aioli brings a pop of heat! [nbsp]The main dishes are a slightly spicy Blackened Scallop Taco topped with a cool, crispy slaw and lemon crema, served along side a traditional Enchiladas Rojas. [nbsp]This Enchiladas Rojas recipe will feature an easy version of made-from-scratch sauce. [nbsp]To finish off the meal, we’ll have Leslee’s original recipe for Stacked Sopapilla Cheesecake, a multi-layered dessert of cinnamon-spiced puff pastry layered with cheesecake filling, topped with a drizzle of caramel. [nbsp]
