A Night in Casablanca-Glorious Moroccan Food

Betty Rosbottom adores the foods of Morocco (which she samples during her stays in Paris) and has planned an entire menu of vibrant dishes celebrating this cuisine. She’ll show you how to make shrimp with a famous Moroccan fish sauce, and explain how to prepare a fabulous tagine. For a special finale there will be fresh orange slices drizzled with spiced red wine, plus cups of Casablanca tea from Mariage Frères (France’s most celebrated tea company). 

Grilled Skewered Shrimp with Moroccan Chamoula

Skewers of grilled of shrimp are drizzled with chamoula (a Moroccan sauce for fish made with lemon, olive oil, garlic, and spices.

Tagine of Lamb Shanks with Olives and Dates 

Dates and brown sugar add sweetness, while green olives and capers lend a salty note to these lamb shanks cooked slowly in the oven with spices and red wine. When done the lamb is so tender it practically falls off the bone.

Golden Saffron-Scented Couscous

Quick cooking couscous grains are enhanced with threads of saffron and butter.

Moroccan Tomato and Eggplant Salad

Roasted cubes of eggplant are paired with diced plum tomatoes, all tossed in a pureed sauce of garlic, onion, paprika and lemon juice.

Fresh Orange Slices in Spiced Red Wine, Vanilla Ice Cream and Pistachio Almond Brittle

Fresh orange sliced are drizzled with a spiced red wine syrup and served with scoops of vanilla ice cream and crushed pistachio almond brittle.
