A Fabulous Moroccan Couscous Dinner

Betty Rosbottom loves the Moroccan food she samples in Paris where there are many North African restaurants showcasing this vibrant cuisine. She typically orders a “couscous menu” which includes grilled chicken plus merguez sausages served with a mound of striking saffron-scented couscous and a big pot of warm homemade broth with vegetables and garnished with spicy harissa and sweet golden raisins. In this class you’ll learn how to cook and serve this beautiful entrée. As starters you’ll sample warm phyllo triangles filled with goat cheese, mint, and lemon as well as Moroccan spiced almonds. Orange and pink grapefruit slices sprinkled with crushed pistachios and served with a crème anglaise enriched with whipped cream will be the sweet finale. Cups of Mariage Frères Casablanca tea will be served with dessert.

Golden Phyllo Triangles Filled with Goat Cheese, Mint, and Lemon

A spoonful of creamy goat cheese, fresh mint, and lemon zest is placed on the corner of a buttered phyllo strip. Then the phyllo dough is folded around the filling, flag-style, forming a triangle. These phyllo packets are baked until golden and served warm.

Moroccan Spiced Almonds Scented with Orange

Both sweet and savory, these crispy roasted nuts are seasoned with cinnamon, coriander, and cloves and paired with a small amount of sugar and orange zest.

Grilled Chicken and Merguez Sausages with Saffron Scented Couscous and Tender Vegetables in Homemade Broth

Orange and Pink Grapefruit Compote with Pistachios and Crème Anglaise

Slices of orange and ruby red grapefruit are sprinkled with chopped pistachios and served with crème anglaise – a custard sauce enriched with whipped cream. Both the compote and the sauce can be prepared a day ahead.
