We talked to: Toasted

We recently had a great conversation with Brad Labonte-Banas (owner) and Sara Finnie (General Manager) of Toasted, a new restaurant downtown!

Hi, Sara and Brad! Could you tell us a bit about Toasted?

Of course! The many years Brad spent with The Max Restaurant Group laid the groundwork for his culinary expertise, and he honed his independence and style as Culinary Director at Riff's Joint and then at The Hotel Northampton as the Executive Chef. During that time, he’d also been considering opening a breakfast and lunch spot for some time, but the right opportunity and moment had not yet presented itself. Once the former Sylvester’s space became available, he felt more grounded, prepared, and supported. Mo (McGuinness) and Pete (St. Martin), the former owners of Sylvester’s (and ongoing owners of the building), were very encouraging and enthusiastic about having him in there.

The spot is just awesome, and was always such a welcoming place to diners as Sylvester’s. Brad is excited to be able to bring the space alive again as Toasted, offering a variety of menu items, from special toasts to traditional pancakes, breakfast sandwiches, waffles, and more. In terms of the name, it’s a bit playful (considering how many dispensaries are now in the area!), and also makes it clear that toast is a big part of the menu, with an array of options for customizing it.

We know we have big shoes to fill in that space, but we’re here for it. Our team is learning and expanding, and together we’re all figuring out how to make things run as smoothly as possible. Brad really welcomes and appreciates feedback from customers so we can continue to improve and welcome both new folks and regulars.

What are some exciting things coming up for your business, including new menu additions, etc?

We’ll definitely be making some price adjustments as we continue to figure out what makes the most sense, both for us and for our customers. The menu probably won’t change a lot, but we’ll make some lunch additions over time. As we get more established, we also want to do wine dinners, Superbowl parties, and other fun events. We’ll also offer some package buffet options for occasional private events. We see lots of potential within the space, and are very excited about what’s to come.

As a business owner, what do you do to unwind/relax/rejuvenate?

As soon as he leaves at 4, Brad is still searching for barista items, and thinking about how to improve things. That said, he’s also very mindful about rest time and feeling ready to take on the next day. He’s very organized about putting things together. He’s also an avid reader, and loves to lose himself in books. He also loves gaming when he has the opportunity.

What is one thing about Northampton that inspires and motivates you?

Everything! There’s an interesting small city feel here, but it’s still a community. We feel quite supported and love getting to know our customers. We have one regular who comes in and has connections to local artists, so through that relationship we’re now displaying local artwork. I really believe that people want to engage and get to know you here. It’s a truly lovely community and family. Other business owners are not afraid to offer caring support and advice; instead of a sense of competition, there’s encouragement and enthusiasm.

And finally... What’s your favorite fall food and/or beverage?

A roasted butternut salad with spinach is amazing at this time of the year. Also, butternut squash bisque and risotto. For me (Sara), a beverage would be hot apple cider—it’s a nostalgic drink from childhood.  For Brad, just a special coffee that he makes himself, and then water throughout the day.
